1 Pound of figs, chopped 1 Pound of dates, chopped 1 Pound dried apricots, chopped 4 Pounds of apples, chopped 1 Pound of prunes, chopped 3 Onions, chopped 4 Buds of garlic, chopped 2 Pieces fresh ginger root (size of walnuts), chopped 2 Cups brown sugar 1 Teaspoon of cinnamon 1 Teaspoon of allspice 4 Ounces of preserved ginger 1/2 Pound of dried currants 1/2 Pound of seedless raisins 1/2 Cup of salt 1 Tablespoon ginger 2 Tablespoons of curry powder 1 Teaspoon turmeric Grated rind and juice of 3 lemons 1 Tablespoon of pepper 1 Teaspoon clove Cider Vinegar 1/2 Cup of sherry


Soak the prunes, pit if needed and chop them. Soak the apricots. Pit and chop the dates. Peel and chop apples. Mix the sugar and spices with 2 cups of vinegar, boil up and pour over all the chopped fruits. Add more vinegar to just to cover. Let simmer 3 hours or until thick. Add the sherry and seal.
