1 1/2 Teaspoons of baking powder 1/2 Teaspoon of salt 2 Cups of all-purpose flour, plus extra for dusting 1/2 Cup of granulated sugar 3/4 Cup of unsalted butter, cut into small pieces 1 Cup of sultanas (golden raisins)
Sift the flour, baking powder, salt and ginger into a bowl and stir in the sugar. Rub in the butter until the mixture is like fine breadcrumbs. Stir in the raisins. Beat the eggs and stir in just enough to make a firm but sticky dough. Turn the dough onto a floured work surface, sprinkle it with flour and roll it to a thickness of ½-inch. Cut it into rounds with a 2 ½- inch cutter. Re-roll the trimmings and cut out more rounds. Brush a heavy frying pan (skillet) with oil and heat it over a medium heat. Fry the cakes for about 5 minutes on each side until they are well browned. Serve warm , with butter and preserves.
