2/3 cup of chopped onion 3 Tablespoons of bacon fat 1 Cup of raw converted white rice ! Cup of chopped green pepper 1 Teaspoon chili powder 1 Can (8 ounce) of whole tomatoes 2 Teaspoons of salt Chopped fresh tomato and chopped green pepper (optional)
In a medium-size heavy skillet with a tight-fitting cover, sauté the onion in the hot bacon fat. Stir in the rice, 1 cup of green pepper, chili powder, the can tomatoes and the salt. Add 2 cups of water. Bring to boiling, then reduce the heat, and simmer, covered for 20 minutes, or until the liquid is absorbed and the rice cooked. Garnish with chopped tomato and green pepper or zany Mexican peppers.
