Mexican Sweet Peppers

3 Red peppers (about 1 pound) 3 Green peppers (about 1 pound) 2 Tablespoons of olive oil 1 Tablespoon wine vinegar 1/2 Teaspoon salt 1/2 Teaspoon dried oregano leaves 1/8 Teaspoon pepper
Wash the peppers and cut each one in half lengthwise, then remove the ribs and seeds. Cut each half into fourths lengthwise. Heat the oil in a large skillet. Add the peppers, and cook over a medium heat, stirring occasionally, about 15minutes or until peppers are just tender. Gently stir in the vinegar, salt, oregano, and pepper.
