Noodles with Sweetbreads and Almonds

8 Ounces of shell noodles 2 Pairs of sweetbreads 2/3 Cup of sliced brown almonds 1 1/2 Cups of rich cream sauce 3 Tablespoons of parmesan cheese
Poach the sweetbreads for 15 minutes in water. Cut them in 1-inch pieces and sauté in butter. Cook noodles in boiling salted water and drain them. Add the cheese to the cream sauce with sweetbreads and mix with the noodles. Empty into a hot serving dish and sprinkle with the toasted almonds.
