Poached Pears with Riseling

4 very ripe pears (bartlette are nice) 1 cup sweet riseling wine 3 cups water 1 teaspoon black pepper corn 1/2 cup sugar
Peel pears. Core from the bottom leaving the pear intact and the stem on. Bring to simmering water, wine, sugar and pepper. Poach pears (covered) for about 15 mins or until tender reserving liquid for service. Serve warm or chilled with small amt of the poaching liquid. The sweetened liquid is excellent as a glaze when reduced by further boiling till half gone and drizzling over the pears at service.
