Red Cabbage, Apples and Wine

1 Red cabbage 2 Onions, chopped 3 Tablespoons of sweet vermouth 1 Tablespoon of sugar Salt and pepper 4 Tart apples, diced 3 Tablespoons of butter Cornstarch
Soak a small cabbage in cold water for 15 minutes and drain. Shred the cabbage rather coarsely and put on to steam tender in a covered pot with the chopped onion, vermouth, sugar, salt and pepper. If necessary add ¼ cup of water. This will take from 4 to 8 minutes. Bind the liquid with a little cornstarch dissolved in 2 tablespoons of cold water. If you like it more sweet and sour, add more vermouth or lemon juice and sugar. Lightly saute the tart apples in butter and mix them with the cabbage.
