1 Cup of all-purpose flour 1/3 Cup of rye flour 1/8 Teaspoon of salt 1/2 Cup of unsalted butter, soften (no substitutions) 1/3 Cup of sugar
Combine flours and salt in a bowl. Beat the butter and sugar in a mixer bowl until light and fluffy. Gradually beat in the dry ingredients. Preheat the over to 375°F. Grease 2 cookie sheets. On a lightly floured surface with a floured rolling pin, roll the dough 1/8 inch thick. Cut with a 2 inch scalloped cookie cutter. Transfer to cookie sheets and cut out 1/2-inch circle slightly off center. Prick each cookie with a fork. Bake 5 to 7 minutes, until lightly browned. Cool on wire racks. Decorate with a ribbon.
