Ingredients:

1/3 Cup of chopped onions 3 Tablespoons of butter 1 1/3 cups of egg barley 1/2 Teaspoon of salt 1/4 Teaspoon of pepper 2 3/4 Cups of broth (beef or chicken)


Directions:

Saute the onion in the butter until almost soft, then stir in the egg barley for 2 or 3 minutes. Add the broth, salt and pepper, then cover tightly and let simmer for 25 minutes over a slow fire or in a covered baking dish in the oven. Stir once or twice to see if there is enough moisture. It is done when the broth is absorbed and the barley is fluffy.
